Dried and sweetened hibiscus flowers are decorative and a delicacy. The flowers are harvested from the bushes during fruiting season and then dried. Citric acid, malic acid, and hibiscus acid give hibiscus flowers a refreshingly tart flavor.
Hibiscus, also known as marshmallow, belongs to the mallow family. The shrubs grow in warmer regions of the world and produce flowers that, when dried, are used to flavor curries in South Asia. Hibiscus flower tea is extremely popular in Africa and Mexico. Due to its anthocyanin content, the infusion has a deep red color and tastes delicious both hot and cold.
