Pine nuts have a delicate, almond-like flavor that is particularly enhanced by roasting. They play a significant role in the cuisine of many Mediterranean countries, used in sauces (such as pesto), salads, and fillings, or in cakes and pastries. Pine nuts are also a welcome addition to nut mixes and trail mixes.
Pine nuts (Latin: nuces pinea) are the approximately two-centimeter-long seeds of the stone pine, a pine species native to Asia. Today, these trees with their umbrella-like crowns are typical of the Mediterranean region. The pine nut harvest there begins in October and lasts until about March.
Pine nuts are distinguished by their high nutrient content. 100 grams contain approximately 12 grams of high-quality protein, 60 grams of fat (of which 22.7 grams are unsaturated fatty acids), 20.5 percent usable carbohydrates, and 1 percent fiber. Like other dried fruits and nuts, pine nuts contain a high proportion of vitamin B1, as well as niacin, vitamin B2, vitamin A, and the minerals phosphorus, calcium, and iron.
