Pistachios, with their sweet, almond-like flavor, are primarily used in the production of sweets and pastries, but also in cooking and ice cream. Pistachios are especially popular as a snack, as they are pleasantly tender and crunchy raw, and deliciously savory when roasted.
Pistachio trees, which can grow up to 12 meters tall, belong to the sumac family and are native to the Middle East. Pistachios, which are now primarily cultivated in the USA and Turkey, have been grown since antiquity. The edible, light green pistachio kernels have a brownish skin and are surrounded by a thin, hard shell. Pistachios are rich in fiber.
