Dried rhubarb is versatile and can be used in a variety of ways, for example in the preparation of desserts and muesli, and is also excellent as a light snack. The refreshing, tangy flavor of rhubarb is due in part to the malic and citric acids it contains. In addition, rhubarb is rich in potassium, iron, and vitamin C, yet very low in calories.
Rhubarb belongs to the knotweed family and originally comes from the Himalayas. It has thrived in Europe since the 18th century. The reddish-green leaf stalks, which can grow up to 70 cm long, can be harvested here from April to June and are very popular in cooking.
